Catskills Backpacking Trail Recs

No, i'm not looking to backpack in the Slope, but I was hoping some Slopers into backpacking would have some good trail recommendations for backpacking in the Catskills.
- We're looking for a 3 day, 2 night trip
- I'd prefer to not do a thru hike, but instead pack in Friday to someplace beautiful and set up camp.
- Leave camp in place Sat.
- Break camp on Sun and hike back out.

Preferably near water so I can do a little fly fishing, but i'm open to non-water also.
