butchery knife skills/sharpening

hi all,

next time I'm in NYC, I'd like to take some classes in butchery and knife skills/sharpening. cooking isn't such an issue -- I know enough to do with ingredients that I don't generally fuck things up. but people take their knives to the machete sharpener here, they all still have great knife skills (I don't), and the meat sellers (including at major supermarkets) use bandsaws for meat hacking. it's massively unsettling to see your nice, bone-in roast get whisked away and cut into pieces so fucked up there's almost nothing you can do short of stew or braise to help them.

so, suggestions?

    I believe Marlow & Daughters in Williamsburg is doing butchery classes now. For knife skills, try the astor center:

    The Brooklyn Kitchen in Williamsburg has some basic butchering and knife skills classes. The butchering classes seem to be taught by folks from Marlow & Daughters, mentioned above.
