Formerly grilled cheese on Franklin. Now sushi. 563 Lincoln

Longtime readers may recall that the original incarnation of Glady's (located at the NW corner of Lincoln and Franklin) was opened by the folks that operated the Morris Grilled Cheese Truck.

I (and I think others...) believed that Glady's would be a brick and mortar version the truck.   

However, it ended up being a restaurant that had a far larger menu, yet wasn't very successful.   The owners pretty quickly closed it and relaunched it as a restaurant serving Caribbean food with a rum focus.

Over a year ago, we were told that a grilled cheese takeout would be opened in a space located in the back of the restaurant, around the corner on Lincoln:

Today, I was able to look behind the plywood fence that has covered the above storefront for some time and have the following report:

1.   It looks much different,   It has been "de-bricked" is in the process of getting storefront style windows.    

2.  A worker told me construction may be complete within a month.

    As a result of sharing the kitchen with Glady's, we did not get to see the DOH approval steps.

    They were exempt.

    I agree!  I LOVED the sandwiches at Glady's, I hope these ones are similarly inspired...

    I went today, got the pollos hermanos. it was pretty close to the glady's original. it was great!

    My wife and I loooooooved the sandwiches here, but last year they put a sign out that said they were closed for a few weeks to focus on catering events...then they never re-opened. I know they have the truck and the catering, so they are still in business, but we are pretty bummed the sandwiches are gone! So, we passed by today, and the left half of the space (the big kitchen they used for the truck and for catering) still says Morris Test Kitchen (Employees Only). 

    But, the former sandwich space has been repainted blue and now says "Chisai Sushi Bar" on it.

    Ehh the sushi was pretty poor, but I never tried it once it became a 'poke bar'. The Morris/Glady's people just seem to move from trend to trend. Still kinda amazed that the carribean theme worked out considering the area..
