DUCK FAT

Hi Everybody!

My wife and I just moved to the neighborhood. Does anybody know of a butcher in these parts that would stock duck fat? I did some hoofing around today, and came up emptyhanded.

    The Key Food on Fifth Ave in Park Slope sells D'Artagnan stuff, so they might have duck fat. The manager will get just about anything if you stand there staring at the cooler long enough...

    Here's an earlier thread on the general butcher question...you might have to call around.

    You just moved in and your first need is duck fat? Nice.
    There's a great fine food shop on Vanderbilt that might have it -- betw. Prospect Place and St. Marks, just near The Usual (whose new incarnation confounds me). I can't remember the name of the store, but you'll find it.
    It's got a really nondescript outside and I worry about its success, because it doesn't look like much from the outside. They have a great cheese counter and lots of delicious fancy things you never know you want until you see them, like quince paste and English biscuits. My husband buys porchetta there, an Italian pork. In the Slope, this place would be overrun.

    Delicacies. It's a nice place. I just wish they carried more stuff.

    ....I called Staubitz, and they did in fact have duck fat, and a duck for me. Terrific. A short train ride to boot.

    The conversation after my initial order was awesome:

    Staubitz Guy "Gimme a name."
    Me: "Liam"
    SG: "Christ. Last name"
    Me:"......."
    SG: "Shingles? What? Come on!"
    ....then I repeated myself. And spelled it. Then he said "here's a number, give them the number, they'll give you your duck." Then he hung up on me while I tried to say thank you. Awesome.

    Bierkraft on 5th ave in PS has duckfat, they'll order you a 5 lb. tub of it for you if you want.

    That's been my experience there, too...I love that stuff...worth the train ride.
