    I worked as a cook at a lodge in AK one summer where I learned the secret to making hash browns at home. Boil a bunch of potatoes. Let them cool. REFRIGERATE overnight. In the morning, heat oil in a skiller. Shred potatoes into hot oil. Season with salt and pepper. Brown and then flip and brown the other side. That's it. You get the crispy golden goodness on the outside, and the center is soft and hot. It takes some forethought but is worth it.

    Another secret is to microwave the potatoes instead of boil them. That way they get cooked and soft without getting waterlogged.

    It is hard to find hashbrowns around here for sure. Easy in the south and west coast. Latkes (the potato pancake) are generally better than most home fries, but entirely different than hashbrowns... just thinking about Hanukkah I suppose.
