So Bergen Bagels is open on Washington and Fulton (again, posted here because so many PHers schlep past this place to the Clinton/Washington C train).

Looks amazing, and there was already a good crowd in there this morning.

unbelievably, the service at this new bergen bagel is almost as inept as olde brooklyn bagel. 5 servers and only one cashier makes for a convoluted ordering/paying process. cashiers are slow.

does any bagel shop out there know how to do it?

I've backed away from Olde Brooklyn Bagel, as they seem to have reverted to their dysfunctional ways. Last time I was there, I had a simple order (bagel with chicken salad) and it took about 15 minutes for them to get it finished and ring me up. The line was not that long (maybe 6 people) and there were four people behind the counter and two at the register - and, as mentioned before, the customer is the one preparing the coffee. Some people are simply not cut out to operate a business efficiently.

Bergen bagel at Flatbush continues to do well. Their bagels, however, are huge.

I feel guilty when I finish a bagelwich.

i should clarify. 5 servers, about 12-15 ppl on line, 1 cashier. i only order 6-9 plain bagels; everyone else seems to get a whole wheat bagel with the insides scooped out and low fat scallion cream cheese on the light side with one slice of tomato and two slices of red onions. and by this time, 5 ppl are waiting to get their bespoke sandwiches and they're all standing right by the cashier and no one is yet ready to pay yet because they're either waiting for their order or they just remembered that after waiting in line for 15 minutes, then they start fishing in their fat wallets for their money. why can't you have the money ready??!?!?!
