I don't think I know anyone who makes their own eclairs. You sound like a worthy opponent.

Since it seems we have so many who love to bake and show it off - how about a Katrina fundraiser/bake off. We can sell what we make as well as charge to allow people to judge. Im more than willing to help set it up and bake some items.
