My current favorite:

Pork chops or lamb chops or chicken -grill or oven bake

Simple marinade of lemon, garlic, olive oil, and fresh herbs like rosemary&oregano (or even mint or dill), salt and pepper (or pepper flakes if you want heat)

Once meat is cooked slice it and place in the middle of a warm toasted flatbread or inside a pita. Top with feta, tzatziki, sliced cucumbers & tomatoes and a squirt of lime if you are so inclined.

I've been hooked on different variations of this recipe for weeks now.

  • Simple stuff I did not know: According to The Silver Spoon (“Italy’s best selling cookbook for the past 50 years”) you always sprinkle the grated cheese on the pasta *before* the sauce.

    I tried this and it makes way more difference than I expected. Not from the book, but I found that a younger creamier cheese melts into the pasta better than the dryer more aged cheeses that I was using before. Good value: an Argentine parmesan. Been a treat to do this with the fresh tomatos and basil from the farmers markets this summer. Thank you farmers!!!
