Use balut sa puti (It a stage where the beak, feathers and claws are not yet fully developed). Saute some garlic and butter. Add 1/2 cup of vinegar (this is good for 50 pcs of balut), balut and the fluids. Adjust taste with soy sauce and salt. The balut that they served to me were topped with sauce use in siopao.

I've gotten into buying meat from grass-fed animals. Pricier, but tastier. And that way I can enjoy a delicious pork tenderloin, like we had on New Years, without thinking about the ugliness of industrial cattle farms.
