I must admit that I have never even heard of dill pollen.

like other pollens it should be used at the end of cooking, or as a garnish. if you like the flavor of dill, it should be good with fish and potatoes (it's much milder than the reg. spice)

How well does it go sprinkled on canned chicken?

not as good as chocolate covered bacon, but it'll do in a pinch
