Or however it's spelled. I'm looking for a Christmas cake--one of those that looks like a tree log--as I volunteered to bring one to a dinner and thought I'd just whip one up. Having just looked at a few recipes for it I'm rethinking the making it from scratch thing and looking into buying one. Anyone know of any bakeries in Brooklyn that might make a good one?

  • I don't know where you buy one, but I recently made one from semi-scratch, and it was dead easy because
    I used an anngel food cake mix and Cool Whip to frost it, filled with crushed raspberries and Cool Whip, and decorated with (you guessed it) raspberries. You could buy a marzipan mushroom or woodland creature for a little more verisimilitude, but it sure did look like a snowy log.

    (I had nothing to do with ingredient choice btw - this was a very specific request. Cool Whip ain't half bad....)

    The only trick is to roll it up in a clean dish towel while it's hot out of the oven, so it retains that shape. You let it cool, then gently unroll to fill and frost it.

    You make a diagonal cut on the end and use that bit as a small branch.

  • Thanks for the suggestion. You're right, it wouldn't be so hard to do this. What stumped me was doing the meriengue mushrooms actually. I wonder where I would find those. I'll look into it. It might be fun once I get started.

  • I'm thinkin' Broadway Panhandler or Sur La Table would have some kind of decorative mushroom, perhaps marzipan. They carry alot of specialized baking gear.

    Come to think of it, Dean and Deluca or Gourmet Garage might sell something like that this time of year...
  • Saw Bûche de Noël for sale at Dean and Deluca downtown . . . $120, special order only. I have to say, they look the same as what any skilled 9th grader makes for French class . . .

  • NY Cake Supply on 22nd St between 5th and 6th Ave in Manhattan have a great selection of pans, pre-made marizipan decorations, chocolate, etc. Be careful if you like to bake - you will spend more money than you planned on in there - trust me ;)
