"Olmstead" restaurant is coming to the former location of Cooklyn, 659 Vanderbilt
quote:
A Former Alinea Chef and an Atera Horticulturist Will Open a New Brooklyn Restaurant
As restaurant résumés go, Greg Baxtrom's is as good as it gets: The Chicago-born chef has worked at Alinea, Per Se, Atera, Blue Hill at Stone Barns (as the chef de cuisine for two years), and, most recently, at Lysverket in Norway. This spring (May, likely), he'll finally open his own restaurant, in collaboration with Ian Rothman, who has worked as the horticulturist at Atera since its opening in 2012. Details are still sparse, but it's called Olmstead, it'll be located at 659 Vanderbilt Avenue in Prospect Heights, and it's going to be on the "affordable" side. Baxtrom says:
Ian and I became great friends during our time at Atera, we were both working as part of their opening team. What he did with that subterranean garden was really incredible, growing dozens of plant varieties for the restaurant at one time. He also has such strong relationships with the local farmers and would bring in the most incredible product. We're really excited to team up together for Olmsted. We have this great garden in the back and we're really looking forward to spring, so we could do something cool with it!

BTW, a restaurant called Cooklyn used to occupy this space and its opening and closing was covered by us here: http://www.brooklynian.com/discussion/comment/568213#Comment_568213

Had 1 meal at Cooklyn and that was enough. Figured the big crowds meant awesomeness, but my meal was almost an exact replica of the Hungryman Salsbury Steak dinner. Horrible. And we were freezing by the back door they kept open in winter (to clear smoke) and had to ask them to please close it. Maybe they knew they were going to close and just quit caring..

They are opening next week and I've heard they turned the backyard into a garden to grow food for the restaurant.

i tried it out tonight, got 2 snacks, 2 apps, 2 entrees and 1 dessert with a friend. verdict, good solid food.i was a bit wary about the price and it being too 'fancy' for this neighborhood, but the service was great, the food was complex and tasty, overall a great experience.this is the kind of place i'd take friends or my parents if they come here and i want to show them fancy, good food. not a place i'd eat casually or often (mostly due to the price).

About 3 weeks ago, Ms Whynot and I stopped on a Friday around 7, but were told they would not have a table until 8:30.
We decided on a burrito from Maya instead. -
Doesn't look like that will be changing any time soon: http://ny.eater.com/2016/8/10/12425482/olmsted-prospect-heights-reservations
