They may choose a completely different name to do business under.
One gets to have as much fun naming their LLC as they choose.
It is like a choosing the have Snoopy tattooed in a private place: only those who already know you are likely to see it.

Today it looked like they might be having a private event in the backyard and the painted sign on the window said "Faun". Guess one does find fauns in the Wilderness.

From Craigslist: "Faun is a soon-to-open new restaurant in Prospect Heights, Brooklyn. We will be hand-making the vast majority of the menu from scratch in-house - even sourcing some botanicals from our onsite garden. The regional starting point for our food and wine menu is Northern Italy, and we will explore outward from there. The space is intimate and beautiful and we have a locally revered chef in the open kitchen. We can seat ~44 inside, including a 10-seat bar, with an additional 35 in the rear patio/garden area. "

FAUN A neighborhood charmer, to be sure, but this airy, polished storefront with a long bar and seating in a lushly planted garden may well attract a wider audience. It’s about the chef, Brian Leth, who was at Vinegar Hill House for four years. David Stockwell, who owns the restaurant with Carla Swickerath, said the name was meant to reflect a certain mythic playfulness. Though many dishes on the Italian-accented menu seem familiar, they often veer into quirky new directions and showcase uncommon ingredients. A soft shell crab is parked on a Caesar-style salad, bone marrow lurks in the ravioli, and there are offerings like tongue, Spanish mackerel, tripe, cockscombs, veal short ribs and lamb neck. Tom's ain't all that far away and does a fine job. Except it's not 24hr.
But a diner is a pretty low-margin business, which isn't the easiest thing to make work at the rents around Brooklyn these days.

Someone tried opening one on Flatbush in the space that now houses Gran Castillo de Jagua, it didn't last, and that was in a higher traffic location than Vanderbilt. Haven't heard much buzz about this place (nothing on the level that accompanied the first few weeks of Olmstead), but I'll wager this place is successful.

Finally got around to eating at FAUN at 606 Vanderbilt Avenue this week. While not cheap, it certainly has affordable items on the well-thought-out menu. And the food is spectacular (in a sublime way...) The staff is about the best working on Vanderbilt Ave and the setting and ambience comfortable and beautifully designed. (I hear one partner is an architect and it shows.) Warm greeting when you enter, and pleasant thank you as you leave. A real gem in our ragged little community. It looked like the people in the garden were having a delightful time even tho it was a chilly night.
