    I just recently read the most interesting article about the dangers of breathing aerosolized pig brains. Not that it is something I am danger of doing, but more an indictment of industrialized meat packing.

    But really. The last sentence in the NYTimes article really tweaks me. Where the doctor says, "It’s a great detective story." Come on. People's lives have been destroyed. They are still debilitated. The story seems to focused on just getting them back to work. Back to the salt mines, ya'll.

    It reminds me of Jurassic Park.

    "Yeah, but your scientists were so preoccupied with whether or not they could, they didn't stop to think if they should."

    Or to update it. These folks were so focused on whether they _could_ aerosolize pig brains, pour the slurry into pools and drain them into containers for sale, that they never stopped to consider if they _should_.

    Or something like that.

    Ahem. Well, back to building a better pig.

    mostly I don't have the inclination to build a proper rant about factory farming in this space at this time, but I just want to say those motherfuckers at Cargill and Monsanto have made a much less delicious pig, and I hate them for it. If the pigs were old-skool (ha), people might just want to eat those brains at their local Babbo outlet (or political organizing community dinner, whatever) instead of going the aerosolized slurry route.

    Cargill is a total fucking disaster on all possible levels (outside their own profits, of course)

    i had the same response to the last line of that article, btw, daver, and i was raised by doctors. i was taken aback at the apparent lack of feeling. i can only hope the quote was badly out of context.

    it is interesting that it seemed to be a kind of allergic reaction that doesn't necessarily point to a disease that would cause problems for those who ate the brains, although, of course, i agree with rants about factory framing.

    back on topic, i LOVE the poster and the scarf.

    The brains were pooled, poured into 10-pound containers and shipped to be sold as food — mostly in China and Korea, where cooks stir-fry them, but also in some parts of the American South, where people like them scrambled up with eggs.

    Seriously, the best recipe I ever created consisted of salmon steaks wrapped in raw bacon, and then grilled on a barbeque grill.

    Bacon Ice Cream Alert!
    For all those Outer Borough bacon lovers (and really, who doesn't love bacon?), here's a heads-up.

    One of Applewood's desserts last night was a deconstructed apple crisp with a generous scoop of BACON ICE CREAM.

    For those who think bacon ice cream sounds weird, you can move along.

    For those who drool at the thought of bacon ice cream, it was all that you'd want. Lots of applewood smoked bacon flavor that was perfectly balanced with the creaminess of the ice cream (gelato?)

    I doubt this is a long-term thing (but it was new last night so it's probably around for at least a week) so call before you go.
